It is not a green tea or a black tea , but somewhere in between this. Due to its complex production method, the oolong takes on a wide variety of flavours & aromas, resulting in a truly exotic tea. When I first tasted oolong, I just could not believe the flavour .It was unlike any tea I ever had . I watched the brewing process. The tea leaves slowly opens, such a mindful process. Unlike any other tea it does not require any additional flavouring such as sugar or milk.

BREWING OOLONG TEA IN CHINA
Traditionally it is brewed in GAIWAN. To infuse the tea leaves they are placed directly in the cup with the lid. The underside of GAIWAN lid captures the aroma, which the tea lovers share before pouring the tea into separate porcelain tea cups.
BREWING OOLONG TEA IN INDIA
We can easily brew it in our ceramic/porcelain tea pot. The base needs to be wider for the rolled leaves to unfurl. Brewing time is 4 to 5 minutes to get the intense flavour. Try not to use an infuser coz the space is not wider for the leaves to brew. Never over boil the water as it will burn the leaves. Pour it in a white porcelain cup, so you can view the bright colour of the tea.
